A Healthy Blackberry Cheese Blintz Recipe
Make your mornings extra special with our Blackberry Cheese Blintz recipe. The first step to making these cheese blintzes is preparing the three-ingredient blackberry sauce. Place blackberries and sugar in a saucepan over medium heat. Bring the mixture to a boil, then reduce the heat to low to a simmer. Simmer the sauce for five minutes, then crush half of the berries with a spoon. Stir in cornstarch to thicken the sauce and set it aside.
To make the blintz batter, whisk together the batter ingredients in a large bowl. We make our blintz batter healthy with a few simple swaps, including whole wheat pastry flour and nonfat milk. We also add eggs, a small amount of white sugar, vanilla extract and melted coconut oil.
Finally, it’s time to make the creamy, dreamy ricotta filling that’s stuffed inside these tender blintzes. Simply blend together ricotta cheese, cream cheese, one teaspoon of white sugar, lemon juice and lemon zest.
Now it’s time to get cooking! Heat a large nonstick skillet to medium heat and spray it with nonstick spray. Pour a quarter-cup of batter onto the hot pan. Swirl the batter to form a large circle. Cook the blintz for two to three minutes, carefully flip it and continue cooking for another minute. Remove it from the heat, then spoon about two to three tablespoons of the ricotta filling over the warm blintz. Roll it up and repeat this process with the remaining batter. Top your blintzes with the blackberry sauce before serving.

Ingredients:
- 1 cup whole wheat pastry flour
- 1 cup nonfat milk
- 2 eggs
- 1 Tbsp white sugar
- 1 tsp vanilla extract

- ¾ cup ricotta cheese, part skim
- 4 oz cream cheese, low fat
- 1 tsp white sugar
- 1 lemon, zested and juiced
- 4 cups blackberries
- 1 Tbsp. cornstarch
- 1 tsp. white sugar
Directions:
- Start by making the blackberry sauce. Place blackberries and sugar in a saucepan over medium heat. Bring to a boil, then reduce heat to low to simmer. Simmer for 5 minutes and then crush half of the berries with a spoon. Stir in cornstarch to thicken.
- To make the blintz batter, whisk together the blintz batter ingredients in a large bowl.
- For the ricotta filling, blend together the ricotta, cream cheese, 1 teaspoon of white sugar, lemon juice and zest.
- Heat a large nonstick skillet to medium heat. Spray with nonstick spray. Pour ¼ cup of batter onto the hot pan. Swirl the batter to form a large circle. Cook for 2-3 minutes. Carefully flip and cook for another minute. Remove from the heat.
- Spoon about 2-3 tablespoons of the ricotta filling over the warm blintz and roll it up. Repeat this process with the remaining batter.
- Top blintzes with blackberry sauce before serving.
