To make these cinnamon roll cookies, start by combining blanched almond flour, maple syrup, melted coconut oil, vanilla extract and cinnamon together to form cookie dough. Then using a tablespoon measurement spoon, scoop out the dough and shape it into a cookie and place on a baking sheet.
Next, blend together light butter, brown sugar and cinnamon to form a cinnamon butter spread that you will spread on top of each cookie. Pop the cookies in the freezer for 15 minutes while you preheat the oven to 350 degree. After baking for 10 to 12 minutes in the oven, set your timer for 5 minutes so you can let them cool on the pan first before transferring to your cooling rack.
The final step of making this cinnamon roll-inspired treat is whipping up an icing – all you need is low-fat cream cheese, powdered sugar and vanilla extract. Mix them together, then pipe away as desired! We like to make a swirl shape so that it looks like a cinnamon roll. Delight in homemade cinnamon roll cookies that are gluten free yet utterly delicious!
