Cinnamon Roll CookiesIf you ever find yourself craving something sweet but don’t want to indulge in yet another unhealthy snack, this gluten free cookie recipe is here to save the day. These delectable treats look as delicious as classic cinnamon rolls and can satisfy your sweet tooth without weighing you down with all the added guilt. Not only that, but they’re also super easy to make with only a few simple ingredients — perfect for an impromptu baking session or just some tasty fun in the kitchen!

To make these cinnamon roll cookies, start by combining blanched almond flour, maple syrup, melted coconut oil, vanilla extract and cinnamon together to form cookie dough. Then using a tablespoon measurement spoon, scoop out the dough and shape it into a cookie and place on a baking sheet.

Next, blend together light butter, brown sugar and cinnamon to form a cinnamon butter spread that you will spread on top of each cookie. Pop the cookies in the freezer for 15 minutes while you preheat the oven to 350 degree. After baking for 10 to 12 minutes in the oven, set your timer for 5 minutes so you can let them cool on the pan first before transferring to your cooling rack.

The final step of making this cinnamon roll-inspired treat is whipping up an icing – all you need is low-fat cream cheese, powdered sugar and vanilla extract. Mix them together, then pipe away as desired! We like to make a swirl shape so that it looks like a cinnamon roll. Delight in homemade cinnamon roll cookies that are gluten free yet utterly delicious!
