Ingredients:

  • Cookie
  • 1 ½ cups blanched almond flour
  • 2 Tbsp. maple syrup
  • 3 Tbsp. coconut oil, melted
  • 1 tsp. vanilla extract
  • ⅛ tsp. cinnamon
  • Cinnamon Butter Spread
  • 1 tsp. cinnamon
  • 2 Tbsp. light butter, softened
  • 1 tsp. brown sugar
  • Cream Cheese Icing
  • 2 oz. cream cheese, low fat
  • 1 tsp. powdered sugar
  • ⅛ tsp. vanilla extract

Directions:

  1. Combine cookie ingredients. Take 1 tablespoon of cookie dough and form into a cookie. Place on a baking sheet.
  2. Combine butter, brown sugar and cinnamon. Spread on top of each cookie.
  3. Place cookies in the freezer for 15 minutes. In the meantime, preheat the oven to 350 F.
  4. After 15 minutes, bake the cookies in the oven for 10-12 minutes. Remove from the oven and let cool on the pan for 5 minutes, then transfer to a cooling rack.
  5. Mix or blend cream cheese, powdered sugar and vanilla extract. Place in a zip-top bag and cut a corner off. Pipe cream cheese mixture as a swirl on each cookie.
