On Nutrisystem, Count As: ½ SmartCarb, 1 PowerFuel and ½ Vegetable

Ingredients:

  • 1 lb. lean ground beef
  • 1 onion, chopped
  • 1 Tbsp. tomato paste
  • 1 Tbsp. chili powder
  • 1 tsp. cumin
  • 1 tsp. paprika
  • 1 tsp. oregano
  • 1 tsp. garlic powder
  • ¼ tsp. black pepper
  • 1 cup corn
  • 1 cup black beans
  • 1- 10 oz. can fire roasted diced tomatoes
  • 1 can fire roasted diced green chiles
  • 3 cups beef broth, low sodium

Directions:

  1. Heat large pan to medium-high heat. Brown the beef along with the onions.
  2. Add tomato paste and seasonings.
  3. Transfer mixture to a slow cooker and add the remaining ingredients.
  4. Cover and cook on LOW for 8 hours or HIGH for 4 hours.
