On Nutrisystem, Count As: 1 SmartCarb, 1 PowerFuel, 1 Extra and ½ Vegetable

Ingredients:

  • 1 cup spinach leaves
  • 2 egg whites
  • 2 Tbsp. shredded mozzarella cheese, part skim
  • 1 Tbsp. avocado
  • Black pepper, to taste
  • 1 whole wheat tortilla

Directions:

  1. Grease a pan with nonstick spray. Heat to medium-high heat and add the spinach. Cover and cook until the spinach has wilted. Set aside.
  2. Re-grease the pan again with nonstick spray. Add in the egg whites and cook until almost set. Fold over to cook the other side. Season with black pepper.
  3. Place the tortilla on a flat surface. Add the cheese, then the egg whites, wilted spinach and avocado.
  4. Fold up into a burrito by folding the bottom of the tortilla up and over the filling, then fold in both sides to form a tight cylinder.
