On Nutrisystem, Count As: 1 ½ PowerFuels and 2 Extras

Ingredients:

  • 10 oz. filet mignon
  • 1 Tbsp. olive oil
  • 1 tsp light butter
  • 1 clove garlic, minced
  • 1 Tbsp. whole wheat flour
  • ¼ cup parmesan cheese
  • ¼ cup half and half
  • 1 tsp. dried parsley
  • Black pepper, to taste

Directions:

  1. Melt butter in a small pot over medium heat.
  2. Add garlic and cook for 1 minute. Whisk in flour until combined.
  3. Whisk in half and half and cook for 3-4 minutes or until thickened.
  4. Reduce heat to low and whisk in parmesan, pepper and parsley until well combined.
  5. Set aside on a very low heat setting to keep warm.
  6. Preheat oven to 450°F.
  7. Heat an oven-safe skillet over high heat. Add olive oil.
  8. Season filet with pepper. When oil is hot, sear the steak for 3 minutes on each side.
  9. Transfer the pan to the oven. Roast until steak reaches desired doneness (145°F minimum).
  10. Transfer filet to a plate and let rest for 5 minutes.
  11. Top with parmesan cream sauce.
