Ingredients:
- 2 spinach wraps
- ¼ cup black beans
- ½ cup shredded Mexican cheese, reduced fat
- ¼ cup pico de gallo
- ½ avocado, mashed
Directions:
- Heat a large pan over medium heat.
- Spread the avocado onto one spinach wrap. Top with ¼ cup of cheese, black beans, pico de gallo and then the remaining cheese.
- Top with the second spinach wrap. Place the quesadilla onto the pan.
- Cook for a few minutes. Flip the quesadilla and continue cooking for another few minutes.
- Slice into 8 pieces. Serve with salsa verde or other dips/toppings.
