  • 2 spinach wraps
  • ¼ cup black beans
  • ½ cup shredded Mexican cheese, reduced fat
  • ¼ cup pico de gallo
  • ½ avocado, mashed


  1. Heat a large pan over medium heat.
  2. Spread the avocado onto one spinach wrap. Top with ¼ cup of cheese, black beans, pico de gallo and then the remaining cheese.
  3. Top with the second spinach wrap. Place the quesadilla onto the pan.
  4. Cook for a few minutes. Flip the quesadilla and continue cooking for another few minutes.
