Lemon Poppy Seed Energy Bites

We’ve added this superfood seed to a protein-packed snack that features the classic flavor combination they’re are known for. Our Lemon Poppy Seed Energy Bites taste like a freshly baked dessert that doesn’t require any baking whatsoever. Add this no-bake snack to your weight loss menu and satisfy your sweet tooth without sabotaging your diet.

According to Livestrong.com, poppy seeds are rich in fiber, with over three grams in each two-tablespoon serving. They also contain several minerals, such as calcium, phosphorus, copper and manganese. Calcium, phosphorus and copper are all utilized in the body to support bone health. In addition to poppy seeds, there are many other different seeds that you can incorporate into your weekly menu for added nutrition. Seeds will typically fall into the Extra category on Nutrisystem. To make these Lemon Poppy Seed Energy bites, you will need a half of a cup each of dry oats, cashews and golden raisins. You should also juice and zest one lemon and measure out two teaspoons of poppy seeds. Place all of the ingredients into a food processor except for the poppy seeds. Process until a dough forms, then add the poppy seeds and pulse until the mixture is well combined. Using a tablespoon, portion out 12 equal-sized bites and roll them neatly into balls. Store your finished energy bites in the fridge for healthy snacks all week long!

Healthy Hacks: Not a fan of lemon? Feel free to swap in another citrus fruit, such as lime, grapefruit or orange! You can also add more sweetness with a zero-calorie sweetener like stevia or monk fruit.
