- 3 eggs
- 4 egg whites
- ½ cup cottage cheese
- 5 oz. smoked salmon, chopped
- 2 tsp. olive oil
- 3 scallions, finely sliced
- 2 cloves garlic, minced
- 1 Tbsp. fresh dill
- 1 ½ cup frozen spinach
- Black pepper, to taste
- Preheat oven to 400°F. Grease a pie dish and set aside.
- Heat olive oil in a skillet to medium-high heat. Add garlic and scallions and cook for 5 minutes.
- Add spinach and cook until soft.
- In a medium bowl, whisk eggs, cottage cheese, pepper and dill.
- Pour spinach and scallion mixture into the eggs.
- Pour the eggs into the pie pan. Top with chopped smoked salmon.
- Cook for about 25-35 minutes or until just set. Cut into wedges and serve warm.
