On Nutrisystem, Count As: 1 SmartCarb and 1 PowerFuel
- 1 cup edamame, deshelled
- 2 Tbsp. cashews
- 2 Tbsp. pumpkin seeds
- ½ cup dried cranberries
- ½ cup banana chips, chopped
- 1 tsp. olive oil
- 1 tsp. chili powder
- ½ tsp. cumin
- ½ tsp. onion powder
- ½ tsp. garlic powder
- ½ tsp. smoked paprika
- Preheat oven to 375°F. Line a baking sheet with parchment paper.
- Mix together chili powder, cumin, onion powder, garlic powder, and smoked paprika
- Toss edamame with oil and seasoning.
- Spread mixture onto a baking sheet in one even layer. Roast for 35 minutes, stirring occasionally.
- Add cashews and pumpkin seeds to the mix. Roast for another 5-15 minutes until crisp. Stir occasionally and watch carefully so they don't burn.
- Remove from oven and toss in the cranberries and chopped banana chips.
- Allow to cool before serving.
