Ingredients:
- 2 cups whole wheat pastry flour
- ¼ cup unsweetened cocoa powder
- 2 tsp. baking powder
- 1 avocado, mashed well
- 2 eggs
- 2 Tbsp. distilled white vinegar
- 1 tsp. vanilla extract
- ¾ cup unsweetened almond milk
- ¾ cup Truvia® Cane Sugar Blend
- 2 avocados
- 1 cup Truvia Sweet Complete® Confectioners Sweetener
- ¼ cup unsweetened cocoa powder
- 2-4 Tbsp. unsweetened almond milk
Directions:
- Preheat oven to 350°F. Grease two 8- or 9-inch cake pans.
- In a large mixing bowl, whisk together the flour, cocoa powder and baking powder. Set aside.
- In a separate bowl, whisk together the avocado, eggs, vinegar, vanilla and milk.
- Whisk the sugar into the wet mixture.
- Add the wet mixture to the flour mixture. Whisk until smooth.
- Pour the batter into the greased cake pans. Bake for 40 minutes or until a toothpick inserted comes out clean.
- Let the cakes cool for 15 minutes on a cooling rack. Remove the cakes from the pans and let them cool completely on the cooling rack.
- For the frosting, blend the avocado in a food processor. Add the powder sugar and cocoa powder. Process until creamy. Add milk as needed to thin out the mixture.
- Frost the top of one cake, then place the other cake layer on top. Frost the top and decorate with seasonal candy or sprinkles if desired.
