Ingredients:

  • 1 cup whole wheat pastry flour
  • ½ cup blanched almond flour
  • ¾ tsp. baking soda
  • 1 banana
  • 2 eggs
  • 5.3 oz. nonfat vanilla Greek yogurt
  • 2 tsp. vanilla extract
  • 1 tsp. almond extract
  • 3 tsp. rainbow sprinkles, divided

Directions:

  1. Preheat oven to 350°F. Spray a bread pan with nonstick spray.
  2. Mash the banana in a bowl. Mix in the yogurt, eggs, vanilla and almond extract.
  3. Mix in the dry ingredients.
  4. Fold in 2 teaspoons of sprinkles.

  6. Bake in oven for 30-35 minutes, or until top is golden.
