Toast coconut on a foil-lined pan until the coconut turns golden brown. In a food processor, combine mango, lime juice and the coconut Greek yogurt. Thoroughly process until the mixture has created an ice cream consistency. Stir in lime zest and the toasted coconut shreds and prepare yourself to be whisked away to tropical bliss.

Ingredients:

  • 2 cups frozen mango
  • 1 lime, juiced and zested
  • ½ cup nonfat coconut greek yogurt
  • ¼ cup unsweetened shredded coconut

Directions:

  1. Place coconut on a foil-lined pan. Place in the oven at 350 degrees F and toast for about 3 minutes or until the coconut turns lightly brown.
  2. In a food processor, combine mango, lime juice and yogurt. Blend until creamy.
  3. Stir in lime zest and toasted coconut.
