Ingredients:

  • 4 oz. lean corned beef brisket
  • 4 slices Swiss cheese
  • 4 whole wheat tortillas
  • 2 Tbsp. light thousand island dressing or Dijon mustard
  • 2/3 cup prepared coleslaw or sauerkraut

Directions:

  1. Spray skillet with nonstick spray and heat over medium heat. Place tortilla on heated skillet.
  2. Spread 1 tablespoon of thousand island dressing or Dijon mustard onto the tortilla. Top with 2 ounces of corned beef, 1/3 cup coleslaw or sauerkraut, and 2 slices of cheese. Top with another tortilla.
  3. Cook for 2-3 minutes. Carefully flip to brown the other side until the cheese has melted and both sides are golden brown.
  4. Repeat with remaining tortillas.
  5. Cut into triangles and serve.
