How to Make Chocolate Peanut Butter Easter Eggs
To get started making these peanut-butter-filled desserts, thoroughly mix together peanut butter, syrup and whole wheat flour until a dough-like consistency has formed. Roll about a tablespoon of the peanut butter dough into egg-like shapes and place each “egg” on a lined baking sheet (we suggest using parchment or freezer paper!).
Pop the peanut butter eggs in the freezer for about 30 minutes. While the eggs are freezing, begin melting chocolate with coconut oil in a microwave safe bowl.
The Leaf Pro tip: Stir the chocolate every 30 seconds until it’s fully melted to perfect this healthy Easter treat.
Once the peanut butter eggs have frozen and the chocolate is thoroughly melted, add each peanut butter egg to the chocolate and coat one at a time. Once each egg is fully covered in chocolate, place on the lined baking sheet and let the eggs rest at room temperature to harden or pop them in the fridge or freezer to speed up the process!
Store the finished Chocolate Peanut Butter Easter Eggs in a sealed container in the fridge. Grab one for an on-the-go snack when your sweet tooth starts calling.
