  • 1 cup whole wheat pastry flour
  • ¾ tsp. baking powder
  • ¼ cup unsweetened applesauce
  • 2 Tbsp. white sugar
  • ½ cup unsweetened almond milk
  • 1 egg
  • ½ cup nonfat plain Greek yogurt
  • 1 Tbsp. chia seeds
  • 2 Tbsp. lemon juice,
  • 2 tsp. lemon zest
  • Lemon Icing
  • ¼ cup powdered sugar
  • 1 Tbsp. unsweetened almond milk
  • 1 tsp. lemon juice
  • 1 tsp. lemon zest


  1. Preheat oven to 350°F.
  2. Combine flour and baking powder.
  3. In a separate bowl, combine applesauce, sugar, egg, milk, yogurt, lemon juice, lemon zest and chia seeds.
  4. Add dry ingredients to wet ingredients and stir to combine.
  5. Pour batter into greased mini bundt cake pans or cupcake pans. Place in the oven for 20-25 minutes, until an inserted toothpick comes out clean.
  6. Remove cakes from the oven and pans. Place them on a cooling rack to cool completely.
  7. Combine icing ingredients. Add more milk to thin out or more sugar to thicken.
  8. Pour icing over the lemon bundt cakes and serve.
