Peanut Butter and Jelly Muffins

To make these flavorful muffins, get started by preheating your oven to 375 degrees and line a muffin tin with liners. You can also coat it with a nonstick cooking spray if you don’t have any cupcake liners. Mix together the dry ingredients of the muffin base, which consists of whole wheat pasty flour, baking soda and cinnamon. In a separate bowl, combine the wet ingredients. These include unsweetened applesauce, an egg, peanut butter, vanilla extract, maple syrup and nonfat plain Greek yogurt. Mix together the wet and dry ingredients.
Now that the muffin batter is ready, pour half of the mixture into the muffin tins. You will be making 12 muffins total. Spoon one teaspoon of the strawberry jam into each muffin cup, making sure it’s in the middle of the batter. Pour the remaining batter over the jam mixture and use a spoon to spread it out so it covers the jam. Bake the muffins for about 12 minutes or until a toothpick comes out clean.
