On Nutrisystem, Count As: 1 PowerFuel
- 1 (14.74 oz.) can salmon
- ¼ cup red pepper, diced
- ¼ cup onion, diced
- ¼ cup parsley, chopped
- 1 egg
- 1 slice of whole wheat bread, crust removed, made into breadcrumbs
- 1 tsp. olive oil
- Drain and flake salmon.
- Combine salmon with onion, red pepper, parsley, egg and breadcrumbs. Mix well.
- Form mixture into 4 patties.
- Cook patties in a skillet with olive oil, about 3-4 minutes on each side.
