To make the gazpacho, simply place cubed cantaloupe, minced garlic cloves, diced tomatoes, diced cucumber, scallions, apple cider vinegar, olive oil, black pepper and cayenne pepper into a blender. Blend the ingredients until a smooth and creamy soup base is formed. If the soup is too thick, add a little water to thin it out as needed.

Once everything is blended nicely, refrigerate the soup for at least an hour to allow the flavors to develop.
