Dive into summer on a plate with a sweet and savory Tomato Peach Salad that’s filled with fresh, seasonal ingredients.
This colorful side dish features an arugula base and two different types of tomatoes. Sliced peaches add a hint of sweetness, while feta cheese adds creamy decadence that takes this salad to the next level. The three-ingredient homemade salad dressing continues the sweet and savory theme, combining balsamic vinegar, olive oil and sweet honey.
An Easy Peach and Tomato Salad Recipe
To make this fresh and fun tomato salad, get started by placing one cup of arugula onto a serving plate. Chop up your tomatoes and place them on top of the arugula.
We use a half-cup of tri-colored cherry tomatoes and one plum tomato. However, you can use any tomatoes that you have on hand! If you grow your own at home, this is the perfect recipe to use them up. (Learn how to grow your own tomatoes!)
Next, slice up one peach and arrange it on the salad with two tablespoons of canned chickpeas (no salt added) and a few thin slices of red onion. Sprinkle a quarter of a cup of crumbled feta cheese on top before adding any dressing.
To add even more flavor to this already jam-packed salad, we’ve developed a quick and easy salad dressing to drizzle over the top. Simply whisk together one tablespoon of balsamic vinegar with one teaspoon of olive oil and one teaspoon of honey.
If you’re planning on making summer salads for your meal prep menu, feel free to double or triple the salad dressing. It pairs well with pretty much any salad recipe!
