Nature’s candy is the star of the show in a sweet spread that’s nutritious and delicious. If any fruit deserves the title of nature’s candy, it’s dates. These little gems are chewy and sweet, just like candy! We’re teaching you how to make date paste, a unique and sweet topping, with just three simple ingredients.

Featuring a creamy blend of medjool dates, vanilla extract and unsweetened almond milk, this tasty paste is perfect for spreading on toast, fresh fruit and healthy baked goods. The first step of this recipe takes the longest but is super easy: Place eight pitted medjool dates in a bowl of water to soften for about 30 minutes. (Pro Tip: You can typically find dates already pitted at your grocery store!)

After letting the dates soak, drain them and place them in a food processor with a half-teaspoon of vanilla extract and six tablespoons of unsweetened almond milk. Blend the mixture until creamy and smooth. You can add another tablespoon or two of almond milk if you’d like to thin out this date paste recipe a bit more.

We love this easy Vanilla Date Paste recipe as a tasty topping for whole grain toast, sprouted crackers, baked oatmeal and fresh smoothie bowls. It also makes a great dip or spread for fresh fruit like sliced apples and pears. You can hollow out some strawberries and fill them up with this sweet date paste for a healthy dessert!

This vegan date paste recipe makes five servings. Each serving is about two tablespoons, but may vary slightly depending on the amount of almond milk that you add.  If you’re on the Nutrisystem weight loss plan, you can log it in your NuMi journal as one SmartCarb.
