Fruit is nature’s dessert. It’s sweet, refreshing and nutritious. Plus, nothing says summer like a healthy recipe filled with seasonal produce. We’re serving up summertime in a glass with these Dessert Fruit Cups that are only 30 calories per delicious serving. Dig into this fresh, fun and fruity recipe to satisfy your sugar cravings the healthy way.

The process of making these portable fruit cups is very simple. Gather your four ingredients and get started! You will need one packet of sugar-free gelatin mix, one cup of boiling water, one cup of cold water and one cup of chopped fruit. We use a strawberry flavored gelatin but you can feel free to swap in another sugar-free flavor you enjoy. The fruit can be chopped berries, apricots, peaches, apples, pineapples or even canned fruit in water. Stick with one kind or use a few different types for extra flavor and nutrition. Any type of fruit can be used and you can mix things up every time you meal prep for some menu variety.

After you select your fruit, pour the contents of the sugar-free gelatin mix into a large bowl. Add one cup of boiling water and mix until the gelatin is dissolved. Stir in cold water, then arrange four serving cups. Place about a quarter-cup of fruit into each cup, then evenly pour the gelatin mixture into the cups. Refrigerate for about four hours or until it has set. If you’d like the fruit on the top of your cups, you can put the gelatin cups in the fridge to set a bit before topping them with your chopped produce.

The Leaf Pro Tip: Create a beautiful presentation by using a fruit that is a different color than your gelatin! For example, use orange chopped apricots, peaches or mangoes with a red strawberry flavored base. This color combination is sure to remind you of a summertime sunset. You can also create an ombre effect by layering two different colors of gelatin. Have fun creating different versions with your favorite ingredients. Top your Dessert Fruit Cups with a fat-free whipped cream if you’d like to add another daily Extra to your recipe.

One of these delicious, diet-friendly Dessert Fruit Cups contains just 30 calories per serving. This means that you can count it as one Extra on your daily Nutrisystem plan. Extras are anything between 10 to 35 calories per serving and include condiments, coffee creamer and low calorie desserts like this one.
