Are you looking for a delicious and healthy snack that’s perfect for a party, or just to munch on throughout the week? Look no further – these Air Fryer Zucchini Fritters are sure to be a hit!

Packed with grated vegetables, parmesan cheese and whole wheat flour, these crispy little fritters can be made in either the air fryer or the oven. Dunk them in your favorite sauce for the ultimate game day snack or party appetizer. Let’s get started!

How To Make Air Fryer Zucchini Fritters

Start by grating your zucchini and placing it in a colander or cheesecloth. Lightly sprinkle with salt and let sit for 10 minutes to an hour. This will help draw out some of the moisture from the zucchini so your fritters don’t become soggy. Once done, squeeze out as much liquid as possible from the zucchini and transfer it into a large bowl.

Add grated carrots, grated onion, minced garlic, parmesan cheese, egg, whole wheat flour, chopped fresh parsley and black pepper to the bowl with the zucchini. Stir the mixture until everything is well combined. Scoop mounds of the mixture using a spoon or ice cream scoop and flatten each scoop into a round fritter shape.

Now it’s time to cook the fritters! If you’re using an air fryer, cook on them at 375 degrees for 10 minutes, then flip cook for another five minutes until golden brown on both sides.

If you are baking the fritters in the oven, set the temperature to 400 degrees and bake for 25 minutes until golden.
