Ingredients:

  • 2 Tbsp. light butter, divided
  • 2 sweet onions, thinly sliced
  • 1 clove garlic, minced
  • 1 lb. chicken breast (cut in half vertically)
  • ½ tsp. black pepper (plus more to season chicken)
  • 2 cups beef broth, low sodium
  • 1 Tbsp. fresh thyme
  • 2 Tbsp. balsamic vinegar
  • 2 cups baby potatoes, halved
  • 3 oz. (¾ cup) gruyere cheese

Directions:

  1. Preheat oven to 325°F.
  2. Heat Dutch oven over stovetop set to medium heat. Melt 1 tablespoon of butter. Add onions and garlic. Cook for 15-20 minutes. Set aside.
  3. Heat remaining 1 tablespoon of butter. Season both sides of chicken with black pepper. Place in Dutch oven and sear both sides for 2-3 minutes. Set aside.
  4. Pour in beef broth and scrape up any brown bits. Stir in balsamic, black pepper and thyme.
  5. Add onions and potatoes. Top with chicken.
  6. Bake for 20-30 minutes. until chicken is cooked.
  7. Top with cheese and return to oven until melted.
