Chicken Enchiladas

To make this Mexican-inspired dish, preheat the oven to 365 degrees and get started on preparing the filling for your enchiladas. In a medium-sized bowl, mix together eight ounces of shredded chicken, one cup fire roasted diced tomatoes, a half-teaspoon each of cumin and chili powder and a quarter teaspoon of garlic powder. Set this aside and pour about a quarter-cup of enchilada sauce into the bottom of a baking dish.

Now that your filling and baking dish are ready, lay out eight whole wheat tortillas on a flat surface. Evenly fill each tortilla with the chicken mixture, then roll up the tortillas and place them into the baking dish (seam side down). Top your enchiladas with the remaining enchilada sauce and cheese, then back for about 15 minutes or until the cheese has melted. Garnish with chopped cilantro before serving up this zesty meal!

Ingredients:

  • 8 oz. shredded chicken
  • 1 cup fire roasted diced tomatoes
  • ½ tsp. cumin
  • ½ tsp. chili powder

Directions:
