- 2 cups corn
- 1 Tbsp. olive oil
- 1 jalapeno, seeded and chopped
- ¼ cup cilantro, chopped
- ¼ cup red onion, chopped
- ½ avocado, diced finely
- 2 oz. cotija cheese (or feta cheese), crumbled
- 2 Tbsp. light mayo
- 1 Tbsp. lime juice
- 1 tsp. minced garlic
- Black pepper, to taste
- Heat oil in a large skillet over medium-high heat. Add corn and let cook, stirring occasionally until charred (about 8-10 minutes). Set aside to cool slightly.
- Mix together mayo, lime juice and minced garlic in a small bowl to create the dressing.
- In a large bowl, combine corn, jalapeno, cilantro, red onion, avocado, crumbled cheese and black pepper.
- Stir in the dressing.
- Serve warm or cold with vegetables, chips or as a topping on tacos.
