Ingredients:

  • 2 cups corn
  • 1 Tbsp. olive oil
  • 1 jalapeno, seeded and chopped
  • ¼ cup cilantro, chopped
  • ¼ cup red onion, chopped
  • ½ avocado, diced finely
  • 2 oz. cotija cheese (or feta cheese), crumbled
  • 2 Tbsp. light mayo
  • 1 Tbsp. lime juice
  • 1 tsp. minced garlic
  • Black pepper, to taste

Directions:

  1. Heat oil in a large skillet over medium-high heat. Add corn and let cook, stirring occasionally until charred (about 8-10 minutes). Set aside to cool slightly.
  2. Mix together mayo, lime juice and minced garlic in a small bowl to create the dressing.
  3. In a large bowl, combine corn, jalapeno, cilantro, red onion, avocado, crumbled cheese and black pepper.
  4. Stir in the dressing.
