On Nutrisystem, Count As: 1 PowerFuel, 2 Extras and 2 Vegetables

Ingredients:

  • 1 spaghetti squash, cut in half, seeds removed
  • 1 Tbsp. olive oil
  • ½ tsp. black pepper
  • 1 ½ cup marinara sauce, low sodium
  • ½ cup ricotta cheese, part skim
  • 1 cup shredded mozzarella cheese, part skim
  • 1 egg
  • ¼ tsp. oregano
  • 3 cup spinach leaves

Directions:

  1. Preheat air fryer to 350°F.
  2. Season spaghetti squash with olive oil and pepper. Place into the air fryer and cook for 20 minutes.
  3. In the meantime, mix ricotta, ½ cup mozzarella cheese, egg and herbs.
  4. Once spaghetti squash has finished cooking, scrape out the flesh with a fork and place it into a bowl.
  5. Mix spaghetti squash with spinach, marinara sauce and ricotta mixture.
  6. Stuff spaghetti squash back into the squash bowls. Top with remaining mozzarella cheese.
  7. Air fry for 10 minutes or until the cheese has turned golden brown on top.
