On Nutrisystem, Count As: 1 PowerFuel, 2 Extras and 2 Vegetables
- 1 spaghetti squash, cut in half, seeds removed
- 1 Tbsp. olive oil
- ½ tsp. black pepper
- 1 ½ cup marinara sauce, low sodium
- ½ cup ricotta cheese, part skim
- 1 cup shredded mozzarella cheese, part skim
- 1 egg
- ¼ tsp. oregano
- 3 cup spinach leaves
- Preheat air fryer to 350°F.
- Season spaghetti squash with olive oil and pepper. Place into the air fryer and cook for 20 minutes.
- In the meantime, mix ricotta, ½ cup mozzarella cheese, egg and herbs.
- Once spaghetti squash has finished cooking, scrape out the flesh with a fork and place it into a bowl.
- Mix spaghetti squash with spinach, marinara sauce and ricotta mixture.
- Stuff spaghetti squash back into the squash bowls. Top with remaining mozzarella cheese.
- Air fry for 10 minutes or until the cheese has turned golden brown on top.
