Once they’ve had their chance to cook down nicely, add sliced green bell peppers and diced potatoes so everything can start getting cozy together. Let that cook another three minutes or so.
Pour in salt-free crushed tomatoes, seafood broth, plus any seasonings that strike your fancy. We use a combination of cumin, smoked paprika, black pepper and cayenne pepper. Seal it all off with the lid, then set it MANUAL style for 10 minutes. After that time’s passed, get ready because dinner is nearly done! Once finished, let it naturally release for 10 minutes and then fully release.
Move back to SAUTE mode again before tossing spinach leaves into the pot followed quickly by whatever type of fish you prefer. We use cod filets in our recipe. Let those last eight minutes fly as your meal takes shape beneath its bubbly golden surface until almost too delicious not try at least one spoonful right now (don’t worry; we won’t tell).
Finally stir in some creamy coconut milk—perfection awaits just around this tasty corner. Top it all off with fresh parsley and a drizzle of lime juice, then dive on and savor every morsel.

Ingredients:
- 1 lb. cod fillets
- 2 Tbsp. olive oil

- 1 red bell pepper, sliced

- 2 medium white potatoes, diced
- 1 (28 oz.) can crushed tomatoes, no salt added
- 1 cup seafood broth
- 1 tsp. cumin
- 1 tsp. smoked paprika
- ½ tsp. black pepper
- ¼ tsp. cayenne pepper
- 3 cups spinach leaves
- ¾ cup light coconut milk (canned)
- 1 lime, juiced
- 2 Tbsp. fresh parsley, chopped
Directions:
- Turn Instant Pot on SAUTE and add olive oil. Once hot, add onions and garlic. Cook for 5 minutes.
- Add bell peppers and potatoes. Cook for another 3 minutes.
- Add crushed tomatoes, seafood broth, and seasonings. Stir to combine.
- Add lid and move toggle to SEAL and set to MANUAL for 10 minutes.
- Once finished, let it naturally release for 10 minutes and then fully release.
- Change setting back to SAUTE and add in spinach and fish. Let it cook for about 8 minutes, until fish is fully cooked.
- Stir in coconut milk.
- To serve, garnish with fresh parsley and a drizzle of lime juice.
