Once you’ve prepped your tomatoes, cook ground turkey on the stove top, chopping the ground turkey into small pieces as it browns. Once the ground turkey is thoroughly cooked through, set it aside. Heat olive oil in a pan on medium high and add in onion and garlic. Cook until the onion starts to become translucent. Stir in chopped spinach and continue cooking for an extra two minutes.

Now that the onions and spinach are cooked, add in cauliflower rice and cook for an additional two minutes. Combine the cooked ground turkey with the rice and veggie mixture and add in the reserved chopped tomatoes, chives and Parmesan cheese. Sprinkle with black pepper and mix until the Parmesan cheese begins to melt. Once your filling is cooked, spoon the rice mixture into each tomato cup, sprinkle with remaining cheese, add water to the baking dish and pop it in the oven for about 20 minutes or until the tomatoes are softened.

Ingredients:

  • 4 beefsteak tomatoes
  • 6 oz. lean ground turkey
  • 1 tsp. olive oil
  • 1 tsp. minced garlic
  • ¼ cup onion, chopped
  • 2 cups spinach leaves, chopped
  • 2 cups cauliflower rice
  • 1 cup parmesan cheese
  • 2 tsp. fresh chives, chopped
  • Black pepper, to taste

Directions:

  1. Preheat the oven to 350°F.
  2. Slice the top off of each tomato and scoop out the inside with a teaspoon. Be careful to keep the tomato intact. Chop up the tomato flesh and set it aside.
  3. Place the empty tomato cups in a baking dish.
  4. Cook the ground turkey in a pan on the stove top. Break it into small pieces and set it aside.
  5. Heat olive oil in a pan at medium-high heat. Add in the onions and garlic and sauté for 2 minutes.
  6. Stir in the chopped spinach and cook for another 2 minutes.
  7. Add the cauliflower rice and cook for another 2 minutes.
  8. Stir in the ground turkey, reserved tomato flesh, chives and ¾ cup of parmesan cheese. Season with black pepper to taste. Cook until the cheese has melted.
  9. Spoon the cauliflower rice mixture into each tomato cup. Sprinkle with the remaining cheese.
  10. Pour about 1 cup of water into the baking dish. Bake for 20-25 minutes until tomatoes are soft.
